Transformer question help?

I have a power transformer with secondary outputs of 275-0 and 6.3-0, I know which are the 6.3V wire pairs and which are the 275V ones but I don’t know which is 0 and which is hot in each pair though. Am I right thinking that it doesn’t matter?

It’s for valve/tube guitar amplifier with a diode bridge retifier.

Doesn’t matter. The 6 volt winding is used to heat the filament, so polarity is irrelevant, and the other is rectified to make DC, so again, doesn’t matter.
